Well… resolved :

Website is on OVH, and it seems there is an issue with the last version of wordpress (4.6.1).

In wp-config I had to change :

define(‘DB_CHARSET’, ‘utf8mb4’);

by
define(‘DB_CHARSET’, ‘utf8’); or define(‘DB_CHARSET’, ”);
