Kindly make sure your backup is with you as you are updating from version 1 to 3 which may leads to issues. Also can you share admin logins alog with URL as private reply so we can have a check.
I can see header settings are working just fine. Can you please have a check now ? As far as different headers you are setting those things as per your own needs and over riding main settings. Can you please have a check and update me ?

Kindly if you see console then there are JS related errors which are coming from your installed plugins. Make sure your plugins don’t inject any JS error or try by disabling those errors as those are causing this issue for you.
