I will suggest you build prepare safe update.
1. Take the backup of current websites and keep them safe.
2. Use Stagging or Testing machine (server) and take 1 website and put them on it.
3. Now try to update this website as per normal routine update and see what issue or error you are facing and share with me.
If in case all goes well – start updating 2nd and 3rd website.
