There’s not an option to change the background of the header, the image that you were seeing was the background of the body.
You can change the background of the body from:
wp-admin > Appearance > Customize > Styling > Body Background > Select Background Image / Color https://prnt.sc/1upxi8p

The sizes are working fine but you’ve added that gallery in a half column and that column itself has four sub-columns. Due to the less space available, you can’t get images with greater sizes.

1- How can I keep the Erzen menu and the horizontal scroll or is there an Erzen tutorial?
Please check now the horizontal scroll is working. I have downgraded the elementor plugin. Please don’t update the elementor plugin.
2- Portfolio Grid:
You’ve selected gallery type, not the portfolio items. Please select or add the portfolio items on the home page.
3- Reply Marked Blue:
I’ve marked your reply blue that means as a private reply that only me and you can see that reply no third person can access the user / pass you send me for login to your site.

First of all the tutorials, you’re watching or following are of Codeless Folie theme, not the Codeless Remake theme(your current theme). Please follow the Codeless Remake theme tutorials.
Second, In order to edit Header, Pages, Posts, etc. edit that header/page/post with elementor, make changes and update it. Options in Appearance > Customize are available for general theme settings i.e. you wanna add/remove/change preloader effect on your site.
