In the portfolio, in each category (menu) it changes the items order, and it is not following the date’s order, like usually. Only in the mean one (all categories) is following the date’s order.

Yes, it is normal. This is the default wordpress order structure. If you want to order them by your choice then you have to install a plugin for it. We can recommend “Post Type Order” plugin.
