I purchased this theme thinking I could easily replicate the demo that enticed me to buy it in the first place. Well, to be honest, hoping that I could just ‘select’ that option, customize things slightly and BAM be ready to rock and roll. I’m sure it’s user error, but I’m spending far more time trying to get things how I’d like… and was hoping there’s an easier solution.

Essentially I’d like things to look and function in the same way… of course, with the ability to customize with my own logo/colors/artwork/etc. Is their a simple solution (for someone that’s not super knowledgable in WP) – to ‘duplicate’ this demo?

What you want is already included in theme. You can import the demo you want and change little things (logo, images, text) to create the site you want with little to no code knowledge.

It will help you understand the import process and the steps to take after. In your case instead of importing the default demo, import the portfolio demo.
If you still can not manage to customize it, then fill in the necessary information on your extra information fields of your profile data. So we can help you with it.
