Hello,
In the portfolio, on the “All” tab, items are ranked from the most recent to the oldest.
But when I enter a category, the order of items is not the same.
Where can this come from ?
How can I restore a chronological ranking in all of my categories?

Hello,
When you add a new category the order can be changed but you can change the order as you want in the Customizer by editing the portfolio element. Another way is to install one free plugin for post order.
This will resolve any your issue.

Following a migration, the Customizer works very badly, and I’m not very fond of adding an additional plugin.
While waiting to fix this other problem, is there a place to go make these changes by hand via my ftp files?

No, but this plugin works on backend and will not affect the performance of the website.
Please try to update the theme to the latest version.
