I would like to change different link text entries like for example “continue reading” in a blog list. We are running a German website and therefore need the links to be translated to German. Please advise me with where to do that.

You need to install Loco Translator or translate directly the pot file that is on lang/ folder.
But I recommend to you the Loco Translator Plugin :)

I need credentials to log in, or just do this:
Open this file: template-parts/blog/parts/entry-readmore.php
and change Continue Reading with your text directly
No, you just need to translate them directly into the plugin no need for extra files
