Now that my website is finished, I can’t use any of my minifying plug-ins to optimize the site and make Google Page Speed happy. I usually use Better WordPress Minify and W3 Total Cache.
Can you tell me which javascript and/or css files I should exclude? Or tell me if I can minify any of this?
My client is not going to be very happy with me if I can’t get their page speed scores out of the 30s. Thanks!

Please use any plugins to achieve that. All theme files have a purpose and can not be excluded. We can suggest you to make a local copy of your site and try out several minifying plugins.
Deleting all unnecessary pages/posts/plugins will speed up your site too.
