I’ve used the Kiri demo/page as my homepage, however the header/navigation doesn’t match. How can I specify the header template being used for the menu and logo?

You can select header from:
wp-admin > Appearance > Codeless Header/Footer/Block > Edit Kiri Header > Add display rule for entire Site > Update.
If you want to edit the Kiri Header then you can do this by editing the header with elementor.
wp-admin > Appearance > Codeless Header/Footer/Block > Kiri Header > Edit With Elementor
