You uninstall a theme by removing it and all it’s files from the Appearance > Themes. But make sure it is not active. If it is, deactivate theme by simply activating another theme. Then proceed with the deletion of theme and files.
Or you can do it directly from wp-content/themes. Access the directory using a ftp account. When there, delete theme folder.
After old copy is deleted, you can proceed in uploading the new version of theme. Activate it from the dashboard as normal.

The function you have right now is to show 255 words from the excerpt text! Not content. While you need to show the content text. That’s what the replacement suggested does. It replaces the excerpt text with the content and also it increased the number of words to show. Please replace the entire line as suggested first.
