-As for the header, the header style you have currently does not allow another image like the preview you send us. I suggest you change the header style to “Center Menu and Logo” and then add the additional image at the left side.

You can change the currency and it’s position in Woocommerce > Settings > General > Currency options.
Can you please check you have these settings set correctly and confirm? Can i please see a link of the site?
You can add the additional code in General Options > Tracking Code box. If you have any google analytic code already added, just paste this after that. It will be added in the header.
The first question is depended from theme version, that’s why i suggested first to update theme. Can you confirm that you have the latest version installed? It’s very important because there are important changes made in it.
