Sorry but you can not change header style from page to page. The header is set up in theme General Options > Header Options, and it’s the same for all website pages. But you can chose to display it in some pages and hide from others.

Tower theme is fully responsive. You can check the demo on every device and also in other browsers as well. And it works perfectly. Our other many customers have proven it right.
However, i must recall you that you have made a lot of changes to theme, especially the header. You want to change many core features from it. It is best for you to find the theme more close to your idea of website then just pick one and change every thing of it.
We have other demos too that could fit better you idea of photography website like these: Tower Portfolio, Portfolio Fullscreen, Left Navigation Agency & Presentation, Tower Creative, Fullscreen Presentation..etc.
Please review the theme again and consider the major work done to build it and keep it updated, before making a bad review regarding it.

What version of plugin do you have? Do you have any third party plugins installed? Please send us your wp credentials in a private reply. So we can give it a closer look.
I replied you about the white gab, in this topic of yours.
The white gab is not an error, is due to the way you have set up theme and it has no connection whatsoever with the Envato plugin.
As the error states, you may have deleted the Envato WordPress Toolkit folder, or it could be renamed and the system does not find it anymore. Go to your wp-content/plugins folder and check up what has happened to it. Or just delete it and reinstall from dashboard.
-Wordpress send you messages by changing the color of plugins bars in Plugins. The highlighted bar, means that there is a new update for that plugin. If it doesn’t require you for update, it’s because the new release does not have many important updates compared to your current.

Are you using one single side bar for all pages? Or you want different sidebars for different pages?
If you’ll use only one sidebar and want it to not affect the page’s default width, one alternative is to add the widgets to extra side bar navigation.
We can help you achieve this, for one sidebar(no additional fee needed). But if you want several of them in different page’s, that requires more work and time. We can’t support you on that.

You can use shortcodes into portfolio item content to make it more dynamic. If you do not wish to use the current settings, then just do not add any information in the custom fields. Or images to slider. You can add/remove any part of portfolio items content by editing these files:

-\includes\view\portfolio\single-fullwidth.php
-\includes\view\portfolio\single-gallery.php
What do you mean by keeping the header on top of the page? The header will not be affected by changes in content.

In what screen size are you accessing this? I see it ok, screenshot. However, you can edit the margin-top value until you are satisfied with the result.
