Yes you can override that function or write your own code through child theme. Because custom changes [made directly within main theme] will be lost upon theme update.
It depends on the tasks you want to perform, like if you want to only avoid those errors then you can to just update those files which having those functions and that’s it. Let me know if you further need anything discussed ?
Thanks for the patience, I have checked header file works just fine the only thing is other required files are needed as well. So, to use child theme properly you can add other required files as well and it will be working just fine.

By now you can use customizer settings to style your website until we are checking for the settings page issue.
Just go to appearance > customizer and under stylings tab you can choose your own colors. As soon as we are done with the settings page we will be updating you here.
