How would I edit the element that displays the Latest From Blog codeless element by post category? And, if I edit this element, how and where do I do it without having a future overwrite when you update the theme?

You can find it in file, vc_templates\latest_blog.php Sorry but is not possible to save these edits from future theme updates.
