You can add text for the portfolio items in Portfolio item > Text editor(screenshot), and the Project Details information in Single Portfolio Options > Custom fields (screenshot) and to add/edit/remove the custom fields, go to General Options > Portfolio Config (screenshot).
I’ve added custom fields in ‘Portfolio Config’ but when I go to edit the custom fields in the Single Portfolio itself, they are not editable? They are just text, not boxes I can edit.
Any ideas?
For the time being I can use the code you posted to remove Project Details, but ultimately I would like to include them.

-Can you be more specific? Did you use any css code to remove the Project Details, and now you want to display them back? If so, just remove the code added to remove them in first place.
