Is there a way where I can set the default for product images to be shown as wide and vertical thumbs instead of doing that for each product? Can I change that somewhere in the theme to a default?

wp-admin > Appearance > Customize > Wooommerce > Product Images > (There You can change image sizes for products)

By default, there’s no such option, But it can be done by using customization. And generally, we don’t recommend these types of customization as whenever you’ll update the theme/plugin all changes will be gone.
