You select and deselect a page as theme default product page from
WP-admin dashboard > Woocommerce > Settings > Products > Shop page(in your case https://ankerwechsel.de/shop/) > Save Changes > Done.
Once a page is not selected as the theme default shop page you can edit it through elementor. You can duplicate the pre-build shop page and make changes in it or create a new one, add products and widgets in it, style, and publish it.

From what I’ve seen in the video, you’re trying to edit the shop page (product page selected from woocommerce) with elementor. The page is not editing because the shop page is selected as the theme default product page in woocommerce settings. Now, It’ll get all its styling and layout from the theme default settings.
You can manipulate these settings in Appearance > Customize > Shop but you cannot change the entire layout or styling. If you want a customized shop page with different widgets then deselect the page as the default shop page in woocommerce settings and then edit it in the elementor, add your customized widgets and your shop is ready to display.

When you select the Blog page or the Shop product page in settings as theme default, then they’ll get all their settings from the theme default. You can manipulate these default settings in the Appearance > Customize , but you cannot change the entire page layout and styling.
If you wanna select them as theme default then you have to take care of the theme workflow. If you do it by third-party plugin then it may disturb your theme default workflow.

As you enabled the elementor plugin which causes a disturbance in the workflow of your site. That’s why removing the page header made it a little bit tricky. Now, on all the menu pages Page header is not displaying. In case, the Page header shows on a page then follow the steps:
a) Edit page with WP-bakery backend editor
b) Add page header widget on top of page
c) Update the page
d) If you wanna remove the page header, then just remove the page header and update it.
P.S: It’ll provide you the functionality to hide or display the page header on specific pages.

It looks very strange that your site footer is displaying fine on our end. We’ve tested it repeatedly on different devices and on different browsers but not found this issue. It looks that it just problems on your end please follow the steps, check and let me know:
a) Clear browser cache
b) Change browser
c) Change device for testing purpose
d) If the problem remains persists then send us a recorded video with screen resolution on which you’re testing your site and having this problem.

There’s no such option to hide/remove page title only on a specific page, If we remove the page title by CSS or codeless option it’ll last effect to all pages. If we add a query to do it, then It’ll require a lot of customization in code that wipes out when you update the theme. That’s why we don’t recommend it.
